This pours with a syrup-like viscosity, the complex malt bill putting chocolate and toffee front and centre and coating the mouth. The intensity is lifted further by 300kg of freshly harvested natural honey from Paxton Honey in the Hunter Valley, whose wholesome aroma and gentle sweetness balance a big, bold beer. Good to drink now, though a year or two in the cellar will draw out dried fruit and sherry complexity.
